Low Fat Crab Cakes

If you're worried that crab cakes that aren't cooked in a mountain of butter don't hold up, have no fear. Fat-free mayo and yogurt save the day, and all the classic herbs and spices add the same flavor as ever.

1/2 cup green onions, chopped
2 tablespoons parsley, chopped
2 tablespoons fat free plain yogurt
1 tablespoon lemon juice
1 tablespoon fat free mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon paprika
1/4 teaspoon red pepper
1/4 teaspoon dry mustard
1 pound crab meat, flaked
1 1/4 cup fresh bread crumbs

directions

Combine the scallions, parsley, yogurt lemon juice, mayonnaise, worcestershire, paprika, pepper and mustard in a large bowl. Add the crab and 1/4 cup of the breadcrumbs. Lightly toss to coat the crab. Form into patties; coat them with the reminding bread crumbs, pressing the crumbs in place. Place on a plate lined with waxed paper and refrigerate for 30 minutes.

Coat a baking sheet with non-stick spray. Place the patties on the sheet and bake at 350 degrees F until cakes are golden, about 10-15 minutes.

    What type of red pepper is to be used in this recipe? Cayenne or red pepper chili flakes?

    I did add a pinch of salt but that was the only modification I made. They were good. I'm going to make them again to make po boy sandwiches.

    I came back to write a review and was surprised by the comment that they were low in flavor. Not at all! These are great plus have the benefit of being lower fat. I made the recipe exactly as directed too. I thought it might need salt but decided to just make them as is and was glad I did because I think the worcestershire sauce provided enough saltiness. Really liked this recipe and will make again.

    NOT GOOD! The cakes were pretty low in flavor. I will seek out a new low fat recipe instead of using this one, or maybe just go for a good ole cooked in butter one to get the flavor I was looking for!
