6 tilapia fillets
10 ounces fresh, cleaned spinach
1/4 cup softened butter
1 tablespoon lemon juice
1 tablespoon chopped parsley
1/2 teaspoon salt
1 dash hot pepper sauce
Poach tilapia for 5-6 minutes. Steam spinach for 1-2 minutes.
Add remaining ingredients to the softened butter, whip smooth.
Arrange spinach on a plate. Then place tilapia on top of the spinach. Finish with a dollop of the lemon butter on each fillet.

Quick and easy to prepare - and tasty too! If you want to make it even healthier, melt the butter and just drizzle a little on the fish for flavor.
