1/4 cup dry white wine
1/4 cup chopped seeded tomato
2 tablespoons fresh lemon juice
2 tablespoons drained capers
1 clove garlic, minced
1/2 teaspoon dried basil
4 (6 ounce size) tilapia fillets
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup all-purpose flour
non-stick cooking spray
1 tablespoon olive oil
2 tablespoons light butter
2 tablespoons chopped fresh parsley
lemon wedges (optional)
Combine first 6 ingredients, stirring well with a whisk; set aside.
Sprinkle fillets with salt and pepper. Dredge fillets lightly in flour, and coat both sides of fillets with cooking spray.
Heat oil in a large nonstick skillet over medium-high heat. Add fillets; cook 3 minutes. Reduce heat to medium; turn fillets, and cook 3 minutes or until fish flakes easily when tested with a fork. Remove from pan.
Add wine mixture to pan; cook 30 seconds, stirring constantly. Remove from heat; stir in butter until melted. Spoon wine mixture over fillets; sprinkle with parsley. Serve with lemon wedges, if desired.

this was very tasty, extremely easy and presents well. my family perceived that i was cooking a gourmet meal on a regular weeknight. i enjoyed cooking it.

Wow! Easy, quick and my whole family liked it. My husband wanted me to make sure I put this in my "Special Recipes" box. real winner. Two pointers however: 1) Sauce is just enough for 16 oz of tilapia - it would not have been enough for the 24 oz the recipe specifies. (We cook just under a lb for 3 people.) 2) Faster easier and looks great on the fish is to cut up about 8 grape tomatoes instead of the 1/4 cup seeded tomato.

Dish was a hit!!! I had to sub garlic spice for minced garlic but couldn't really tell the difference. Wine sauce with capers really compliments the fish.

I didn't have capers on hand, so omitted those and replaced the tomatoes with halved grape tomatoes. It turned out great...this one is a keeper for a quick and elegant meal.

This was excellent and very easy. The caper and white wine sauce was the perfect pairing for the tilapia--I definitely added this one to my recipe box!

Very nice dish. The caper sauce adds just enough zing to make it a keeper. Pairs well with a sauted garlic & wilted spinach with parmesan side.
