2 tablespoons grated lemon rind
1 tablespoon olive oil
1 1/4 teaspoon black peppercorns
1/2 teaspoon kosher salt
2 cloves garlic, minced
4 fillets (6 ounce size) tilapia or halibut
lemon wedges for garnish
directions
Preheat oven to 425 degrees F.
Combine grated lemon rind, olive oil, peppercorns, kosher salt and minced garlic. Rub over fish fillets. Bake at 425 degrees F for 7-8 minutes or until fish flakes easily with a fork. Serve with lemon wedges.

Very easy and tasty! The recipe doesn't specify, but the title indicates that the peppercorns should be cracked (just FYI). The fish was done perfectly - moist and flavorful. The amount of lemon rind seemed like it might be overpowering in flavor but it wasn't - it was just right.
