1/4 cup freshly grated Parmesan cheese
1 teaspoon garlic powder
1 tablespoon dried parsley flakes
1 tablespoon olive oil
2 tablespoons butter
1 tablespoon lemon juice
6 tilapia fillets
Combine the Parmesan, garlic powder, and dried parsley in a small bowl and set aside.
Heat a large skillet over medium heat. Add the olive oil, butter, and lemon juice. Cook, stirring occasionally, until the butter is melted.

I have made this recipe many times and my family LOVES it! It's great over rice with peas or green beans on the side. I only flip the fish twice.

The recipe is a bit messy, but tasty. You can not flip tilapia 4 times and expect it to stay in one piece. The parmesan mixture sticks to the pan and not the fish. I ended up putting all the fish and bits and pieces in a platter, scraping the parmesan from the pan, and sprinkling over the fish.
Sounds like you didn't quite follow the directions. The fish isn't flipped for times, it's only cooked once on each side. The topping is added at the end after the fish is cooked.
