Tilapia is a light-flavored fish, so a spiced cornmeal crust such as in this pan-fried recipe helps give it a flavor boost.

ingredients

1/2 teaspoon salt
1/2 teaspoon paprika
1/2 cup cornmeal
1/3 cup whole-wheat or white flour
1 large egg, lightly beaten
1 1/2 pound tilapia fillets
2 tablespoons vegetable oil, divided

directions

Combine the salt, paprika, cornmeal and flour on a plate. Place a bowl with the lightly beaten egg next to the plate.

Dredge the fillets first in the egg, then the cornmeal mixture.

Heat 1 tablespoon of the oil in a large, nonstick skillet over medium high. Add the fish and cook until golden brown, about 4 minutes. Remove from the pan. Add the remaining tablespoon of oil to the pan, and return the fish fillets, cooked side facing up. Cook another 4 minutes, or until fish is cooked through.

recipe tips

Make sure the tilapia fillets are dry before dredging to help the coating stick.

Let the coated fish sit for a few minutes before frying to set the crust.

Don't overcrowd the skillet or the crust may turn out soggy.

Flip the fish gently to prevent the crust from falling off.

Try different types of cornmeal for varying textures.

Pair the fish with a light white wine, like a Sauvignon Blanc or a cold beer.

common recipe questions

Can I use a different type of fish for this recipe?

Yes, other white fish like cod, haddock, or flounder can be used in place of tilapia.

Is it possible to bake the fish instead of pan-frying?

Yes, you can bake the coated fish at 400 degrees F for about 12-15 minutes, flipping halfway through, until golden and cooked through.

What can I substitute for whole-wheat flour?

You can use all-purpose flour or another type of flour like almond flour for a gluten-free option.

Can I add more spices to the cornmeal mixture?

Definitely, feel free to add garlic powder, onion powder, or cayenne pepper for extra flavor (a Mexican or Italian spice blend would also work well).

How do I know when the fish is fully cooked?

The fish is done when it flakes easily with a fork and reaches an internal temperature of 145 degrees F.

Is there a way to make this recipe healthier?

Use cooking spray instead of vegetable oil to cook the fish. You won't get quite the same texture to the cornmeal crust but it will not absorb as much fat.

Can I use frozen tilapia fillets?

Yes, just make sure they're completely thawed and patted dry before coating.

How should I store the leftovers?

Store in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet or in the oven.

Can I make the cornmeal mixture in advance?

Yes, you can mix the cornmeal and spices ahead of time and store it in an airtight container.

Can I freeze the cooked fish?

Yes, cook the fish as directed and then cool completely. Place on a baking sheet or plate and freeze until solid. Transfer the fish to an airtight container and freeze for up to 3 months. Thaw overnight in the refrigerator and then reheat in a skillet or in the oven at 350 degrees F for 10-12 minutes.
