Citrus Mango Tilapia

ingredients
1 1/2 pound tilapia
3 jalapeno peppers, seeded (or to taste)
3 cloves garlic, minced
1 small onion, quartered
2 cups mango, peeled
1/3 cup cider vinegar
1/4 cup fresh orange juice
1 teaspoon thyme
3 tablespoons olive oil
directions
Combine garlic, onion and peppers in food processor. Add remaining ingredients except fish. Process until just a little chunky.
Place in plastic bag with fish. Marinate for 30 minutes.
Remove fish, reserving marinade. Grill or broil fish for about 3 to 5 minutes per side.
In a small saucepan, heat marinade. Serve with grilled fish.

I'm trying to increase the amount of lean protein we eat so we're eating more fish. I like tilapia the best but am running out of new ways to make it. This way is delicious! I also didn't know you can marinate fish lol. I broiled it but I also think you could cook the fish right in the marinade mixture then remove the fish and thicken the mixture with cornstarch and serve it all over rice. Just an idea.

Made it in a sandwich wrap lined with Romaine and added strips of carrot and English cucumber. Perfect.

This recipe is exotic and versatile. It is an unusual blend of flavors that work nicely together. I found this recipe easy to make, and great over chicken too. I made this marinade with only one pepper and in my blender! I reused the marinade as a sauce for other dishes and each time I cooked with it, it only got sweeter. I am recommending this recipe to my co-workers!
