ingredients

1 cup tomato, chopped
1/2 cup tomatillo, chopped
1/2 cup tequila
1/3 cup green onions, chopped
1/4 cup white wine vinegar
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
1 clove garlic, minced
6 mahi mahi or other firm white fish fillets (about 1-inch thick)

directions

Combine first 9 ingredients in a small bowl. Stir well.

Prepare a grill or broiler. Place fish on grill rack or broiler pan coated with cooking spray and cook for 5 minutes on each side or until fish flakes easily when tested with a fork.

Serve with tomato salsa.
