Mahi Mahi Fillets

ingredients
1 1/2 pound mahi mahi fillets
1/2 cup chablis or other dry white wine
1/4 cup sour cream
1/4 cup mayonnaise
2 green onion, finely chopped
2 tablespoons grated Parmesan cheese
lemon juice to taste (optional)
Garnishes
lemon slices
fresh parsley sprigs
directions
Rinse fillets with cold water, and pat dry. Place in an ungreased 11 x 7 x 1 1/2-inch baking dish. Pour wine over fillets, cover and marinate in the refrigerator for 1 hour, turning once. Drain, discarding marinade.
Combine sour cream, mayonnaise, and green onions, spread sour cream mixture evenly over fillets. Cover and bake at 450 degrees F for 20 minutes or until fish flakes easily when tested with a fork.
Sprinkle with Parmesan cheese and lemon juice to taste, if desired. Garnish, if desired.

Absolutely Delicious! I was in the mood for some Mahi Mahi and I went on this site and signed up and stumbled across this recipe. I first picked it because of it's simplicity, which it was, then because I already had most of the ingredients minus the fish. I had 2 of my closest friends over for dinner and they absolutely loved it. My friend asked me not to mention that it was made with any kind of wine because her husband wouldn't eat it...so after he ate it ALL we told him and he was impressed! I made it with a side of Brown Lemon Butter Rice and some sauteed squash & zuccini (sorry if I misspelled it). Perfecto...thank you...I highly recommend this recipe.
