Slow Cooker Broasted New Potatoes

This three-ingredient recipe is a winning combination. Red potatoes are tossed with olive oil and Italian dressing mix and slow-cooked until tender.

ingredients

4 pounds new red potatoes, unpeeled
2 tablespoons olive oil
1 envelope zesty Italian dressing mix

directions

Place the potatoes in a bowl and drizzle with the olive oil, tossing to coat completely.

Sprinkle the potatoes evenly with the Italian dressing mix. Stir well to combine and distribute the seasoning.

Place the potatoes in a crock pot. Drizzle with any remaining oil in the bowl.

Cover the crock pot and cook on low for 8 hours or on high for 4 hours, until the potatoes are soft and pierce easily with a fork or skewer.

Serve hot.

    I skipped the plastic bag and just stirred everything together in a large bowl. I also didn't use the crockpot but placed the bite-size pieces in a buttered 13x9 pan. Came out delicious! Everyone loved them. The only thing I might do next time is remove the foil and let them crisp up a bit. Might even throw in some other veggies or mushrooms. Very adaptable recipe. Super easy!
