Hash Brown Potato Patties

ingredients
1 1/2 pound frozen shredded hash brown potatoes, thawed
3/4 cup finely chopped onion
1/2 cup finely chopped green bell pepper
2 tablespoons dried seasoned bread crumbs
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup fat-free egg substitute
butter-flavored nonstick cooking spray
directions
Place all of the ingredients except for the cooking spray in a large bowl, and stir to mix well. (Note: The mixture can be made a day in advance and refrigerated until ready to use.)
Coat 2 large nonstick baking sheets with the cooking spray. For each patty, spoon 1/4 cup of the potato mixture onto the sheet and form into a 3-inch patty. Spray the tops of the patties with the cooking spray.
Bake at 425 degrees F for 10 minutes, turn the pancakes with a spatula, spray again, and switch the positions of the pans in the oven. Bake for an additional 7 to 10 minutes, or until golden brown.
If desired, spray the patties once again with a light coating of the cooking spray just before serving to give them a pan-fried appearance. Serve hot.
