Cheese Flautas

ingredients
5 ounces Cheddar cheese, shredded
1/4 pound Parmesan cheese
12 small corn tortillas
1/3 cup olive oil
1/4 cup sour cream PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 tablespoon sour cream
1 cup salsa
directions
Combine cheddar cheese and 2/3 of the Parmesan cheese in a bowl. Divide evenly amongst all tortillas. Roll tortillas.
Heat oil in a heavy skillet over medium-high heat. Brown stuffed tortillas in oil 2 minutes per side, or until brown. Drain on paper towels.
To serve, pour sour cream over flautas and sprinkle with remaining Parmesan cheese. Serve with salsa.

Very easy and a good meatless option when served with other flautas or other mexican food. I also made mini pork tacos for a party and both went fast!
