ingredients

3 1/2 cups rolled oats
1/2 cup walnuts, chopped
1/2 cup almonds, finely chopped
1/4 cup flaxseed, ground
1/4 cup oat bran
2 tablespoons sunflower seeds
2 tablespoons pumpkin seeds, ground or whole
1/2 teaspoon kosher salt
1/2 teaspoon stevia powder
1/2 teaspoon cinnamon
1/2 cup unsweetened applesauce

directions

Preheat oven to 275 degrees F.

Mix all dry ingredients (pulse nuts in food processor for easy chopping). Add applesauce to dry mixture in 2 to 3 portions, thoroughly mixing before adding next portion to evenly distribute throughout.

Spread on nonstick half sheet pan or rimmed cookie sheet. Bake for 1 hour 15 minutes total, stirring every 15-20 minutes.

Add dried or fresh fruits as desired such as raisins, dried strawberries, dried cherries, dried blueberries, fresh peaches, bananas, whatever you like!

    Very good and nutty but I didn't like the stevia in it. Maybe it was the brand I bought but it had a bitter taste to it.

    I have been looking for a sugar-free granola and after a failed search decided to make my own. I added shredded coconut and a little coconut oil to lessen the dryness, I was also out of apple sauce so I added enough vanilla unsweetened almond milk to moisten and extra cinnamon and it turn out surprisingly well! I will definitely make again, this recipe serves as a a good framework from which to experiment!

    Very addicting. Makes you feel good. Healthy. Delicious. My husband and I can't live without it now. I also add some grapeseed oil and unsweetened coconut flakes. We use unsweetened vanilla almond milk for the cereal. YUM! I appreciate healthy but good tasting recipes using stevia. Thank You!

    Good recipe, stevia is clever and nicely mellowed by the process (I used NuStevia brand, 3 packets). I found the mixture to be a bit too dry for my tastes, during cooking, so I added a quarter cup olive oil to amend, and it worked out well.
