Amaretto Caramel Corn

ingredients
3 quarts popped popcorn
1 cup unblanched whole almonds
1/2 cup margarine or butter
1/2 cup brown sugar, packed
1/2 cup Amaretto liqueur
directions
Heat oven to 250 degrees F. Arrange popcorn on 2 jelly roll pans; sprinkle almonds over popcorn.
In a small saucepan, melt margarine over low heat, then stir in the brown sugar and Amaretto. Bring to a boil, stirring occasionally. Boil 3 minutes. Remove from heat.
Pour over popcorn and toss until thoroughly coated. Bake at 200 degrees F for 1 hour. Spread on foil or wax paper to cool. Store in loosely covered container.

The amaretto replaces the corn syrup nicely, which I didn't have tonight when my craving hit! The syrup was a bit thin even after boiling 3 minutes, so, I stirred the popcorn after baking 15 minutes. After baking an hour the result was caramel corn that was light and crunchy with a delicate amaretto flavor.

When I poured the mixture over the popped corn, the corn shriveled up and there is still liquid in the pan after 2 hours -- There must be some mistake in the amount of the amaretto. 1/2 CUP???

oh-my-goodness! easy to make, with DIVINE flavor and satisfying crunch! a real crowd pleaser, also a great gift idea!
