Sweet Or Sour Cherry Jam

This cherry jam can go either way: sweet or sour! Step up the sugar to fruit ratio for a sweet jam that's perfect on baked goods. The sour version can be used as a condiment on meats (like grilled pork or chicken!).

ingredients

4 cups prepared cherries
2 pouches Certo liquid pectin
7 cups granulated sugar
1/4 cup lemon juice (for sweet cherry only)

directions

Stem, pit and finely chop or pulse in cherries in food processor.

For Sweet Cherry, reduce fruit to 3 3/4 and add the lemon juice.

In large saucepan, stir together prepared fruit, sugar and lemon if using. Bring to a boil over high heat. Boil hard 1 minute. Remove from heat.

Stir in liquid pectin. Stir and skim for 5 minutes to prevent floating fruit. Ladle hot jam into hot jars, leaving 1/4-inch headspace. Adjust two-piece caps. Process 10 minutes in a boiling-water canner.

NOTE: For a special sweet cherry jam add a little whiskey or brandy.

    followed the recipe except didnt usen7 cups sugar used 4 was like water

    • Sorry, but using 4 cups of sugar isn't following the recipe. Use the 7 cups and it will turn out.

    Easily one of my favourite jams I make. I make strawberry, raspberry, peach, wild blueberry, sour cherry and this year I'm not making the sweet cherry and making mango jam instead. The sour cherry jam is the best though. Tart and sweet.

    I had made 2 batches of sweet cherry jam,the first was with the powder pectin,it was good.I used 5 cups of sugar, the second was liquid certo,way to sweet,it required 7 cups of sugar and a lot slower to set.Both were easy recipes,Certo might have a recipe for lower sugar.You also have to go online to find it.thanks
