Tuna Melt With Avocado And Jack Cheese

ingredients
2 cans (6 ounce size) tuna in oil, drained and flaked
2 tablespoons mayonnaise
1 ripe avocado, halved, pitted, and peeled
1/2 small red onion, finely chopped
1 small carrot, grated
2 tablespoons chopped fresh parsley
1 tablespoon lime juice
salt and pepper, to taste
4 slices crusty bread
4 slices Monterey Jack cheese
directions
Turn on the broiler.
In a bowl with a fork, mash the tuna. Add the mayonnaise and avocado and continue mashing until the mixture is smooth. Stir in the onion, carrot, parsley, lime juice, salt and pepper.
Place the toasts on a baking sheet. Spread the tuna mixture on the toasts, top each with a slice of cheese, and transfer them to the oven, setting the sandwiches at least 12 inches from the broiling element. Broil for 2 to 3 minutes or until the cheese bubbles. Watch the slices carefully.
Serve at once.
