Roasted Fennel And Peppers

ingredients
3 medium bell peppers (any color), cut into 1/2" strips
2 medium fennel bulbs, cut into 1/2" wedges
1 1/2 tablespoon olive oil
1/4 teaspoon salt
freshly ground black pepper, to taste
directions
Preheat the oven to 400 degrees F. Line 2 baking sheets with foil.
Toss together the peppers, fennel and oil in a medium bowl. Spread in a single layer on the baking sheets and roast, turning occasionally until soft and slightly blackened along the edges, 29-30 minutes. Sprinkle with salt and pepper.
NOTE: These sweet morsels can be used to top sandwiches, flavor salads, toss with pasta, or enjoy plain as a side dish or appetizer.
Store in the refrigerator, covered, for up to one week. Let them come to room temperature before serving.
