Stewed Okra With Fire Roasted Tomato
INGREDIENTS:
canola oil cooking spray
1 tablespoon canola oil
1/2 cup diced green bell pepper
1/2 large onion, diced
2 cloves garlic, mashed
1 can (14.5 oz size) fire roasted diced tomato with garlic
1 cup marinara sauce
1/2 teaspoon dried basil
1/2 teaspoon Italian seasoning
1 package (32 oz size) frozen cut okra
salt and pepper, to taste
2 cups water
DIRECTIONS:
Spray a wok with cooking spray. Add oil, and saute the green pepper, onion and garlic until wilted. Add the fire roasted tomatoes, marinara sauce and stir. Add basil, Italian seasoning, okra, salt & pepper to taste, and water. Cook on high until boiling. Lower the heat to medium-low and continue cooking for 1/2 hour until ready.
