A flavorful way to cook mushrooms. They are sprinkled with garlic and rosemary and drizzled with olive oil then baked in the oven.

4 large flat mushrooms, wiped clean
3 cloves garlic, peeled & finely chopped
1 tablespoon finely chopped rosemary
4 tablespoons extra virgin olive oil
1/2 lemon, juice of
Remove the stalks and place the mushrooms in a lightly oiled ovenproof dish.
Sprinkle the garlic and rosemary over the mushrooms, then drizzle over the oil. Season with salt and pepper.
Bake in an oven at 450 degrees F for about 20 minutes. Remove from the oven and serve with the lemon juice squeezed over some crusty bread.

Mushrooms are an ingredient I often overlook. I love them, but they don't come to mind when I think of making something. I loved the simple flavors of this recipe. I used portobello mushrooms which Brent always thinks taste like meat (in a good way, that is). You also can't beat how easy this recipe is.
