6 tablespoons butter
1 large onion, chopped
2 teaspoons dried basil
2 teaspoons dried oregano
1/2 teaspoon dried thyme
1/4 cup lemon juice
1/2 cup sherry
1/4 teaspoon crushed red pepper flakes
3 pounds whole mushrooms, washed
Preheat the crock pot on high heat.
Meanwhile, in a small skillet, melt the butter over medium heat. Add the onion and cook, stirring occasionally, until the onion is soft, about 5 minutes. Add to the crock pot.
Reduce the crock pot to its lowest temperature setting. Add the basil, oregano, thyme, lemon juice, sherry, and crushed red pepper. Cover the crock pot and cook on low for one hour.
15 minutes before serving, turn the heat to high again. Add the mushrooms and stir well. Let cook for 15 minutes then serve.

You could use chicken broth. The flavor won't be as "deep" but it would be an easy substitute.

These are the best mushrooms I have ever had. My whole family loves them and asks me to make them all the time. Smells like fresh hot pizza when you open the crock pot!! Yummy!
