Cranberry Ketchup

ingredients

1 pound fresh cranberries, rinsed
2 ounces diced onion
1/4 cup packed brown sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 tablespoon packed brown sugar
1/2 cup cider vinegar
1 medium orange, peel of, chopped or grated fine
1 clove garlic (or more to taste)
1 1/2 teaspoon salt
1 teaspoon pickling spice (or to taste)

directions

Combine all the ingredients in a stainless or enamel pan and cook over low heat, stirring, often, until thick and almost smooth, about 30 minutes. There is little liquid used, so be careful of scorching.

Strain through a food mill or puree in a food processor.

Serve with turkey, squab or venison. Goes great with grilled meats.
