Roasted Vegetable And Cheese Casserole

ingredients
2 large onions, cut into wedges
2 pounds zucchini, sliced
1/4 cup olive oil
1/4 cup flour
1 pound tomatoes, cut into wedges
2 Red bell peppers, cut into squares
1/2 cup pine nuts
1 cup black olives, halved
1/3 cup fresh basil, minced
1 cup Grated Fontina or other medium-soft cheese
1/4 cup balsamic vinegar
directions
Saute onions and zucchini in oil until tender. Turn out into wide, shallow 3 qt. baking dish. Sprinkle with flour. Arrange tomatoes and bell peppers on top. Bake, uncovered at 450 degrees for 20 minutes or until fork tender.
Top with pine nuts and olives, then basil, then cheese. Bake 10 - 12 minutes longer. Drizzle with balsamic vinegar before serving.
