Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

Marinade
3 tablespoons lemon juice
1/3 cup red wine vinegar
1/4 cup olive oil
Vegetable Mixture
1 package (18 ounce size) French cut green beans
1 cup artichoke hearts, drained
1 tablespoon olive oil
1/2 cup fresh parsley, chopped
1/4 cup chives, chopped
2 tablespoons pimiento, chopped (optional)
Mix marinade together. Toss green beans and artichoke hearts in marinade. Keep in a covered glass dish in the refrigerator until ready to cook. Drain off as much of the marinade as possible.
Heat 1 tablespoon olive oil in a large skillet. Toss beans and artichoke hearts until heated through (about 3 or 4 minutes). Add parsley and chives. Add the chopped pimiento at the last minute for color.

This was quite tasty - like a warm, marinated bean salad. We quartered the artichoke hearts and used regular cut green beans (not French cut). The only addition we thought might be good would be to add some diced onion to the skillet before adding the bean mixture. It would give it a little extra texture. The pimento was a nice touch of color!
