Snow Peas Appetizers With Crabmeat Filling - CDKitchen.com

ingredients

50 snow peas
1/2 cup cream cheese, at room temperature
1/2 cup crabmeat
1 medium red pepper, seeded and deveined, finely chopped
2 teaspoons lemon juice
1 teaspoon Worcestershire sauce
salt
black pepper

directions

Remove stem from snow peas. Blanch snow peas for 30 seconds in boiling water and immediately place them in cold water to stop cooking and preserve green color.

Combine in a bowl or in processor the cream cheese, crabmeat and half of the pepper lemon juice and Worcestershire sauce.

With a sharp pointed knife, open snow peas. Stuff crabmeat filling into each snow pea with a small spatula. Place a small piece of chopped pepper in each snow pea as a decoration. Arrange on a serving platter and refrigerate.

Remove from the refrigerator 30 minutes before serving.
