ingredients

1 pound shrimp (16-20 per pound)
1/2 gallon water
2 carrots, diced
1 onion, diced
1/2 stalk celery, diced
1/2 cup fresh ginger, diced
2 stalks lemon grass, chopped
1 cup white wine
1/2 cup pickling spice

Avocado and Chickpea Relish

2 avocados, seeded, peeled and diced
1 medium red onion, diced
1 ripe tomato, seeded and diced
1 cup chickpeas, cooked
1 tablespoon salt and pepper, to taste
fresh cilantro, chopped
1/3 cup lime juice

Baja Cocktail Sauce

1 cup ketchup
1/2 cup horseradish
2 tablespoons lime juice
1 tablespoon Worcestershire sauce
1/2 cup Clamato juice
salt and pepper, to taste

Garnish

12 slices lime, thinly sliced
branded tortillas
cilantro

directions

NOTE: The avocado and chickpea relish uses a cocktail sauce that needs to be prepared ahead and refrigerated for at least 30 minutes. The relish can be made after the shrimp.

In a pot, bring all ingredients except shrimp to a boil for 15 minutes. Add shrimp and boil for 1-2 minutes. Remove shrimp from stock and chill in ice water. Peel and de-vein shrimp. Refrigerate until ready to serve.

Make the Avocado and Chickpea Relish.

To Serve: Place chickpea relish in a serving bowl. Top with shrimp and garnish with fresh cilantro, sliced lime and branded tortillas.

For Baja Avocado and Chickpea Relish: Gently mix all ingredients; adding the cocktail sauce last.

For Baja Cocktail Sauce: In a bowl, combine all ingredients and chill for 1/2 hour.
