Artichoke And Shrimp-Filled Phyllo Cups

ingredients
3 green onions
1 jar (6 ounce size) marinated artichoke hearts, drained and finely chopped
1/2 pound tiny shrimp
1 package (8 ounce size) cream cheese, soft
1/2 pound phyllo pastry
1/2 cup unsalted butter, melted
1/2 cup grated Parmesan cheese
directions
Mix together green onions, artichoke hearts, shrimp and cream cheese. Set aside.
Butter 5 sheets of phyllo on work surface--do not butter the top of the stack. Cut into 2 1/2 inch squares (or if you have a biscuit cutter, do it in rounds). Repeat with another 5 sheets phyllo.
Preheat oven to 425 degrees F.
Butter mini muffin cups and press the pastry gently into the cups. Fill with cream cheese filling and sprinkle with parmesan. Bake for 10 minutes or until pastry is browned and filling is bubbly.
The most time-consuming part of this recipe is working with the phyllo, and it can be intimidating if you're not used to it. I've seen pre-made puff pastry shells in the freezer section and I'll bet would probably work just as well. The filling is a snap.
