3/4 cup bulgur (cracked wheat)
1/3 cup chopped onion
1 clove garlic, minced
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cardamom seed
1/8 teaspoon ground cloves
1/4 cup butter or margarine
1 can (10.5 ounce size) condensed consomme
1 tablespoon lemon juice
1/2 cup carrots, finely chopped
1/3 cup golden raisins
1/2 cup chopped fresh mint leaves
OR
1 tablespoon dried mint leaves, crushed
1/2 cup chopped tomato
Brown bulgur, onion, garlic and seasonings in butter in a saucepan until tender.
Add consomme, lemon juice, carrots, raisins and mint; bring to a boil.
Reduce heat, cover and simmer 20 minutes, or until done, stirring occasionally. Stir in tomatoes; heat to serve.
