Spanish rice, in an instant! This quick-to-fix side dish uses instant rice and salsa to whip up a tasty rice recipe in just a few minutes. For a chunkier rice, try using Ro*tel tomatoes instead of salsa.


16 ounces salsa
3/4 cup water
1 1/2 cup instant rice, uncooked
1 tablespoon butter
Combine the salsa and water in a saucepan over medium-high heat. Bring to a boil, stirring occasionally.
Stir in the rice and butter. Mix well then cover the pan, remove the pan from the heat, and let sit for 5 minutes.
Gently fluff the rice with a fork then serve hot.
Saucepan: Used to combine the salsa and water and cook the Spanish rice on the stovetop.
Stirring Spoon: To stir the salsa, water, rice, and butter while cooking the Spanish rice in the saucepan.
Measuring Cups: For measuring the water and rice.
Tablespoon: Used to measure the butter if not using stick butter.
Fork: To fluff the cooked rice before serving.

Super easy and tasted pretty good for being made with quick ingredients. I used a good chunky salsa so it had a good texture to it with the veggies in it.

When making an moderately complicated meal with lots of components, this was a very nice recipe for a solid Spanish Rice dish to accompany the rest. Using a rich but basic salsa with instant rice even got the foodie at the table to compliment it, before knowing what it was.
