Spanish Rice And Kielbasa Skillet

Dress up a box of Spanish rice mix with this easy recipe. Simply add extra veggies and kielbasa and the rice mix takes the guesswork out of balancing the seasonings. The result is a delicious one-dish dinner in under 30 minutes.

ingredients

1 tablespoon vegetable oil
1/2 cup chopped green bell pepper
1/3 cup sliced celery
1/4 cup chopped onion
1 pound fully cooked Kielbasa smoked sausage, sliced
2 cups water
1 can (10 ounce size) diced tomatoes and green chiles, undrained
1 package (6.8 ounce size) Spanish rice and vermicelli mix
1/8 teaspoon ground black pepper
1/4 cup sliced stuffed green olives, optional

directions

Heat the oil in a large skillet over medium-high heat. Add the bell pepper, celery, and onion. Cook, stirring frequently, until the vegetables begin to soften.

Add the kielbasa, water, tomatoes, rice mix, and black pepper. Mix well. Cover the skillet and let cook, stirring occasionally, for 15-20 minutes or until the rice has absorbed the liquid. During the last few minutes of cook time, stir in the green olives if using.

Remove the skillet from the heat and let stand for 5 minutes before serving.

    This sounds super delicious! We love Spanish Rice & 'real' Polish Kielbasa (not from a plastic pkg.). I'm sure the sodium content in this dish is frightfully high, but can probably be somewhat reduced by making your own Spanish Rice, instead of using the packaged kind. Also, I usually try to find reduced or no-sodium canned tomatoes, when the other ingredients in a recipe are already noticeably high. In this recipe, I will also rinse the olives of their brine, & I don't think that will affect the outcome. With these alterations, I'm sure we will enjoy this dish very much. I'm anxious to make it. Please try to post Nutr. Info., since many of your readers like to feed their families 'reasonably healthy' meals.
