Cashew Rice

ingredients
1/2 cup cashew nuts (pieces)
1/2 cup sliced celery
1 small onion, chopped
12 small mushrooms, sliced very thin
3 tablespoons butter or margarine
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 cup rice
2 chicken bouillon cubes
2 cups water
directions
Saute nuts, celery, onion and mushrooms in butter in a medium saucepan for 5 minutes.
Add remaining ingredients. Bring to a boil, stirring to dissolve cubes.
Cover and simmer for 15 minutes or until rice is tender and liquid is absorbed.
