Scallops In Leek-Thyme Sauce

ingredients
6 ounces crumbled bacon, fried
1 tablespoon bacon drippings
1 medium julienned leek
1/3 cup dry white wine
1 teaspoon minced fresh thyme leaves
1 1/2 cup light cream
salt
ground white pepper
1 1/2 pound sea scallops
directions
Heat reserved bacon drippings in a medium saucepan. Add leeks, saute until tender, about 2 minutes. Add wine, simmer until evaporated, about 3 minutes. Add thyme and cream, bring to simmer and cook until slightly thickened, about 3 minutes. Season with salt and white pepper, keep this sauce warm.
Heat a nonstick skillet over high heat until very hot. Working in batches, sear scallops, about 2 minutes per side.
Spoon a portion of sauce onto each plate, top each with scallops. Sprinkle with bacon and serve.
