Hickory or pecan wood chips
4 large baking potatoes (about 10 ounces each)
Soak wood chips in water at least 30 minutes.
Wash potatoes, and pat dry.
Prepare charcoal fire in smoker; let burn 15 to 20 minutes. Drain chips, and place on coals. Place water pan in smoker; add water to depth of fill line.
Place potatoes on upper food rack; cover with smoker lid. Cook 3 1/2 hours or until potatoes are tender.
These potatoes are great used in potato salad or for mashed potatoes too!
