These easy scalloped potatoes are true to their name. Layers of sliced potato and onion covered in a cheesy sauce will be ready in under an hour.
1 can (10.75 ounce size) condensed cheddar cheese soup
1 1/2 cup milk
4 Yukon Gold or russet potatoes, peeled and sliced
2 medium onions, thinly sliced
salt and black pepper, to taste
Preheat oven to 350 degrees F. Lightly grease a 2-quart baking dish.
In a bowl, whisk together the cheese soup and milk until well blended.
Layer half the potatoes and onions in the baking dish. Sprinkle with salt and pepper. Pour half of the cheese sauce over the potatoes. Add the remaining potatoes and onions. Season again with salt and pepper then pour the remaining cheese sauce over it all.
Place the dish in the oven and bake, uncovered at 350 degrees F, for 50-60 minutes or until the potatoes are tender.
Remove the scalloped potatoes from the oven and serve hot.
Recipe can easily be doubled.
Make sure the cheese sauce is well blended before pouring over the potatoes to prevent clumping.
Season each layer of potatoes and onions generously with salt and pepper for even flavoring.
For added richness, stir in cooked and crumbled bacon to the cheese sauce before layering.
Sprinkle grated Parmesan cheese on top before baking for a crispy, golden crust.
Allow the dish to rest for a few minutes after baking to allow the sauce to thicken before serving.
To speed up the cooking process, use a mandoline slicer to thinly and evenly slice the potatoes.
Experiment with different cheese blends or add-ins like caramelized onions or sauteed mushrooms for a unique twist.
For a lighter version, use low-fat milk or a combination of milk and chicken broth in place of the condensed soup.
2% milk works best in this recipe but you can use what you have on hand including evaporated milk. If you use a thicker milk, like evaporated milk which is condensed or half-n-half, you may need to thin the cheese sauce with a little water.
Nacho cheese sauce should work fine. If it's thicker than the cheese soup would be you may need to thin it with additional milk.
Slice the potatoes thinly, about 1/8 inch thick, to make sure they cook evenly.
You can add layers of cooked bacon, ham, or even broccoli for added flavor.
While it's traditional to peel the potatoes, leaving the skin on can add extra nutrients and a rustic look to the dish.
You can assemble the dish ahead of time and refrigerate it, then bake it when ready to serve. Just make sure that the cheese soup mixture completely covers the potatoes so they don't discolor.
You can freeze any leftovers in an airtight container for up to 2-3 months. Thaw overnight in the refrigerator then reheat in the oven or microwave until heated through.
Store leftovers in the refrigerator for up to 4 days. Reheat in the oven or microwave.

Wine Pairings
Chardonnay: Want to feel fancy without trying too hard? A buttery Chardonnay is your go-to. Its creamy texture and hints of vanilla will cozy up nicely to the cheesy sauce and make those potatoes shine.

Other Alcohol Pairings
Amber Ale: Dive into the world of beers with an Amber Ale. Its balance of malt and hops complements the hearty, cheesy nature of the potatoes.

Non-Alcoholic Pairings

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.
