Slow Cooker Pot-Roasted Rabbit

Try a rabbit pot roast for an extra rich alternative to the usual pot roast. Onions and rabbit go in the slow cooker along with some seasonings.

ingredients

2 onions, sliced
4 pounds roasting rabbit, skinned
1 clove garlic, sliced
2 bay leaves
1 whole clove
1 cup hot water
2 tablespoons soy sauce
2 tablespoons flour
1/2 cup cold water

directions

Place the sliced onion in the bottom of the crock pot.

Place the garlic in the cavity of the rabbit. Place the rabbit in the crock pot. Add the bay leaves, clove, water, and soy sauce.

Cover the crock pot and cook on low heat for 4-6 hours or until the rabbit is cooked through.

Remove the rabbit from the crock pot and set aside on a cutting board and turn the crock pot to high heat. Remove the bay leaf from the crock pot. Combine the flour and cold water and whisk until smooth. Add to the liquid in the crock pot and stir until the gravy thickens.

Cut the rabbit into serving pieces. Serve with the thickened gravy.

    I made this, it was great. I left out the clove and added thyme. the liquid was perfect and my (whole, fresh) rabbit was done in 4 hrs so I put it on warm until dinner time. I had also cut up a couple of carrots, potatoes and mushrooms in it around the sides and didnt make any gravy. Use smaller pcs of vegs. Meat fell off the bone .

    I bought frozen rabbit pieces at the store. I think they cooked faster that way because it was falling off the bone at 8 hours. Too cooked. Not dry but hard to eat. Flavor was good but I guess I'll have to cook it less next time or find whole rabbit but my store doesn't carry it.
