ingredients
1 cup tart cherries
2 pounds lean pork, fat removed, cut into 1" cubes and chilled
2 teaspoons salt
1 teaspoon dried sage
1/2 teaspoon dried thyme
1 1/2 teaspoon brown sugar
1/3 teaspoon black pepper
directions
In a food processor using a metal blade, pulse cherries, until finely diced. Set aside in a bowl.
In a large bowl, toss cubed pork with remaining ingredients. Divide mixture in half and process with a metal blade. Pulse and turn continuously until desired texture is reached.
Return to bowl. Add cherries and mix until evenly combined. Refrigerate or freeze until ready to use.
