2 pounds ground pork liver
4 onions, finely minced
salt and pepper, as desired
48 sausage casings
Combine the ground pork, pork liver, onions, salt, and pepper. Mix well. Stuff into sausage casings.
Bring a pan of water to a gentle boil. Add the braunschweiger and cook for 20 minutes or until firm.
Remove from the water and let cool. Store in the refrigerator for up to 4 days.
