Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.

This sausage recipe cuts the venison with ground pork to keep the flavor rich without being too gamey, and throws in a flavorful seasoning mix for a little extra oomph.
Seasoning Mix
4 ounces salt
2 ounces red pepper
2 ounces onion powder
1 ounce garlic powder
2 ounces black pepper
3/4 ounce Accent
Sausage
8 ounces vinegar
16 ounces Italian salad dressing
10 pounds ground venison
10 pounds ground pork Boston butt
3 cartons casings
3 bunches onion tops, finely chopped
1/2 cup minced garlic
parsley, chopped, optional
Combine seasoning mix ingredients. You can store this in an airtight container for later use if you wish.
To make the sausage: mix seasoning mix with meat and remaining ingredients (except casings). Stuff in casings (or form into patties).
Use this mix for patties wrapped with bacon and grilled on the pit, to make deer sausage and smoke them in the smoker, or use as fresh sausage, meat loaves, etc. It's good in jambalaya, gumbos and with seafood.
