ingredients
2 packages (10 ounce size) chopped frozen spinach, thawed, drained well, squeeze to remove excess water
2 packages (8 ounce size) cream cheese
1 package (10 ounce size) grated Parmesan cheese
1 cup sour cream
1/2 teaspoon salt
1/2 teaspoon black pepper
1 package tortilla chips
1 1/2 cup tomatoes, seeded and diced
1 can (15.5 ounce size) black beans, rinsed and drained
1/4 cup fresh diced jalapeno, optional
2 cups shredded mozzarella cheese
directions
Large sauce pan combine spinach, cream cheese, Parmesan cheese, sour cream, salt, pepper cook over low heat, stirring frequently for 10 minutes.
Arrange chips on serving platter, spoon spinach cheese mixture over chips, top with tomato, black beans, jalapeno, mozzarella cheese.
Serve immediately.
