ingredients
24 miniature rice cake snacks
2/3 cup medium or hot salsa, well-drained
3 tablespoons chopped canned jalapeno peppers, or to taste
1/2 cup low-fat shredded cheddar cheese
1/4 cup guacamole
3 tablespoons reduced-fat sour cream
directions
Preheat oven or toaster oven to 400 degrees F. Arrange rice cakes close together on a baking sheet.
Spoon well-drained salsa over rice cakes. Sprinkle with jalapeno and cheese. Bake until cheese is melted and nachos are heated through, about 10 minutes.
Spoon guacamole and sour cream over nachos. Serve warm.
