Mandarin Orange Coffee Cake

This coffee cake is so moist and flavorful that you don't need a glaze or frosting. Just dust with powdered sugar and you have a wonderful dessert.

ingredients

1 package orange cake mix
1 package (4 serving size) vanilla instant pudding mix
4 eggs
1/2 cup vegetable oil
1 cup Mandarin orange juice, fresh squeezed
3/4 pound Mandarin orange pulp

directions

Heat oven to 350 degrees F. Grease and flour 10" Bundt pan.

Combine cake mix, pudding mix, eggs, oil and one cup juice. Beat at medium speed with electric mixer for 2 minutes. Add Mandarin oranges in the last 30 seconds.

Pour in pan. Bake for 38 to 43 minutes or until toothpick inserted in center comes out clean. Cool in pan 20 minutes. Invert onto plate and dust with powdered sugar.
