ingredients

1 teaspoon vegetable oil
3 shallots, peeled and chopped
8 ounces boneless chicken breast, cooked, julienned
4 ounces oil-packed sun-dried tomatoes, drained and sliced
1/2 cup heavy cream
1 pound penne pasta, cooked
1 1/2 teaspoon butter
2 tablespoons grated Parmesan cheese
1 teaspoon julienned fresh basil

directions

Heat the oil in a large skillet over medium heat. Add the shallots and cook, stirring, for 2 minutes or until soft.

Add the chicken and tomatoes. Cook, stirring, for 5 minutes.

Reduce the heat to medium-low. Add the cream and cook, stirring occasionally, for 5 minutes.

Stir in the cooked pasta, butter, Parmesan, and basil. Toss to coat the pasta in the cream sauce.

Serve hot.

    I've been making this since I came across it in People magazine over 20 years ago. I tore out the page and it's been in my personal recipe book for years. Along with his Chicken Pot Pie, which is the best I ever had. I was delighted to see this post while looking on Yummly to see if there were more recipes from him. I guess I should look up Mulholland Drive Cafe.

    I used to work at Mulholland Drive Cafe in Miami where Patrick Swayze was a part owner. This dish was on the menu and I think I ate it every single time I worked! It is my absolute favorite EVER - I guess it's really no surprise I gained weight, huh? That was 20 years ago, and everyone I've ever made it for since loves it too - you've got to try it.....

    If you have not tried this pasta you will LOVE it!!!!!!!!!! This is not only good when it is freshly prepared, but gets even better IF there are any leftovers. LOVE IT!!!!!!!!!!!!
