Chicken, bell peppers, celery, onion, and garlic are simmered in salsa and served over pasta to make a delicious and simple dinner

8 ounces penne pasta
3 tablespoons olive oil
3 stalks celery, chopped
2 cloves garlic, minced
1 medium onion, chopped
1/2 green bell pepper, seeded and chopped
1/2 yellow bell pepper, seeded and chopped
1 pound skinless & boneless chicken breast, cubed
1 jar (16 ounce size) salsa
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/4 teaspoon hot sauce
Cook the pasta in boiling water as directed on the package.
While the pasta is cooking, heat the oil in a pan over medium-high heat. Add the celery, garlic, onion, and bell peppers. Cook, stirring frequently, for 3-4 minutes or until crisp-tender.
Add the chicken and cook, stirring occasionally, for 3-4 minutes or until the chicken is cooked through.
Stir in the salsa. Bring the mixture to a boil then reduce the heat to a low simmer. Add the parsley, salt, and hot sauce and let cook for 2-3 minutes or until the pasta is done cooking.
Drain the pasta. Place individual servings of pasta on dinner plates. Top with the spicy chicken mixture. Serve hot.
