Cardamom adds a warm, aromatic flavor to these easy-to-make sweet treats.
2 1/2 cups unsweetened grated coconut
1/4 cup sweetened condensed milk
2 teaspoons ground cardamom
2 large egg whites
2 pinches salt
melted dark chocolate (optional)
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Combine the coconut, sweetened condensed milk, cardamom, and a pinch of salt in a bowl. Mix well.
In a mixing bowl, combine the egg whites and a pinch of salt. Beat on medium speed with an electric mixer until stiff peaks form. Gently fold the egg whites into the coconut mixture.
Drop the cookie batter by tablespoons onto the prepared baking sheet. Leave approximately 1-inch between the cookies.
Place the baking sheet in the oven and bake at 350 degrees F for 8-10 minutes or until the edges just start to brown.
Let the cookies cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely.
If desired, the cookies can be drizzled with or dipped in melted dark chocolate.
