Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

2 whole boneless, skinless chicken breasts, halved
2 tablespoons flour
1 egg
2 teaspoons soy sauce
1/2 teaspoon black pepper
3/4 cup finely ground almonds
3/4 cup corn flake crumbs, crushed
1 tablespoon vegetable oil
1/2 cup apple juice
1 lime, juiced
2 teaspoons cornstarch
1/4 cup honey
Place chicken breasts between two sheets of plastic wrap or waxed paper.
Flatten chicken to 1/2 inch thickness. Dip chicken in flour and shake off excess. Set aside. Combine the egg, soy sauce and pepper in a shallow dish; set aside. In another shallow dish combine ground almonds and corn flake crumbs. Dip chicken in egg mixture to coat and in almond mixture, pressing so the coating adheres to both sides. Brown chicken on both sides in oil in a non-stick skillet over medium-high heat, until chicken is no longer pink and juices run clear when cut with a knife. Remove chicken; set aside. Combine apple juice, lime juice and cornstarch. Add mixture to skillet. Add honey.
Cook and stir until thickened and bubbly. Serve chicken with sauce.

I followed this recipe exactly, except I used bread crumbs instead of the corn flakes. They got really overdone on one side, so I lowered the heat to Medium. I also added spray PAM when I flipped them to keep them from burning more. The flavor is really delicious and it really didn't take very long!! I posted the picture of mine.

I made this recipe the other day and it turned out great. I did however substitute the corn flakes with cornmeal. I did this becuase of an absence of corn flakes I also thought it would seal in the moistness of the chicken better.

This was awesome. I am on a modified protien rich diet and this was perfect. I love almonds and saved them today instead of a snack. The lime hit the sopt and the chicken was perfect. Everyone except my wife gobbled it up. She wont eat chicken unless it tastes like rubber. Great one I am sure it will be made again. Thnaks

Tasted great! I left out the cornstarch and lime and substituted Kashi cereal for the cornflakes, and it still turned out fine.

Very moist chicken. My three year old and my hubby both gobbled it up. I plan on making this a regular part of our meal rotation. Very yummy!!
