Sugar Free Applesauce

Applesauce will always be a favorite among kids, so might as well keep it healthy. Packaged varieties are usually packed with high fructose corn syrup, but this homemade version is plenty flavorful without all the added sugar.

4 medium apples, peeled, cored & quartered
1/4 cup water, more if needed
2 cinnamon sticks
1/4 cup sugar substitute

directions

Combine the apples, water, and cinnamon sticks in a saucepan over medium heat. Cover the pan and bring to a simmer. Let cook for 10 minutes or until the apples are very soft.

Remove the pan from the heat and remove the cinnamon sticks.

Mash the apples by hand or place in a blender or food processor and process until smooth.

Stir in the sugar substitute, adding more if necessary to achieve the desired sweetness.

Store the applesauce in a covered container in the refrigerator for up to 3 days.

    Great variation of my recipe. I core the apples and cut into small pieces or shred/slice in the food processor. I then micro-waves the apples for at least 10 minutes and if they are soft I let them col. or more until they are tender and soft. I prefer to have the skins on the apples since it is a great source of fiber. If the apple sauce is too tart I then add spelnda, but never before so that I can taste the flavor. I also add cinamin or other spices. I sometimes take a peach and stew it in the microwave and add that in--interesting variation
