CRUST
1 1/4 cup graham cracker crumbs
6 tablespoons unsalted butter, melted
1 tablespoon sugar
1 teaspoon cinnamon
FILLING
8 ounces cream cheese, softened
1/2 cup key lime juice, fresh or bottled
1 can sweetened condensed milk
1 teaspoon vanilla extract
TOPPING
1 cup heavy cream, well chilled
1 tablespoon sugar
1 teaspoon vanilla extract
directions
Preheat oven to 350 degrees F.
In a bowl stir together crust ingredients until well combined; press evenly onto bottom and up sides of a 9" pie plate. Bake crust in middle of oven until set and golden, about 10 minutes; cool on rack.
In a bowl with an electric mixer beat together filling ingredients until smooth and pour into cooled crust. Chill cheesecake for at least 1 hour or up to overnight.
In another bowl with cleaned beaters, beat cream with sugar and vanilla until soft peaks form and hold; spread evenly over cheesecake.
May be made 2 hours ahead and chilled.
