With crisp romaine, parmesan cheese, and crunchy croutons covered in a classic Caesar dressing it's no wonder why Caesar is everyone's favorite go-to salad.
3/4 cup olive oil
1/4 cup red wine vinegar
6 anchovy fillets, chopped
4 teaspoons minced garlic
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon white pepper
1 cup grated Parmesan cheese
1 large head romaine lettuce, torn into bite-size pieces
additional grated Parmesan cheese

Combine the olive oil, vinegar, anchovies, garlic, lemon juice, mustard, and white pepper in a blender or food processor until smooth. Add the Parmesan cheese and process until combined.
The dressing can be prepared up to 48 hours in advance. Store in an airtight container in the refrigerator. Bring to room temperature and whisk before using.
Place the torn lettuce in a large salad bowl. Drizzle with the dressing and toss to coat the lettuce.
Serve immediately with additional Parmesan cheese and croutons.

This salad turned out very well and the dressing is a good Caesar Dressing. Will definitely make it again.
