CHICKEN
2 cups yogurt
1 teaspoon finely chopped fresh ginger
1 teaspoon finely chopped garlic
1/2 teaspoon red chili powder
1/2 teaspoon garam masala (see Note)
1/2 teaspoon salt
2 teaspoons vegetable oil
1 pound chicken, cut into cubes
SAUCE
1 teaspoon vegetable oil
2 teaspoons chopped onion
1/4 teaspoon finely chopped fresh ginger
1/4 teaspoon finely chopped garlic
4 cans (8 ounce size) tomato sauce
1/4 teaspoon cumin
1/4 teaspoon garam masala (see Note)
1/4 teaspoon red chili powder
1 cup heavy cream, or less
1 teaspoon chopped cilantro
salt, to taste
For chicken: Mix yogurt with ginger, garlic, red chile powder, garam masala, salt and vegetable oil. Add the chicken cubes, mix well, cover and refrigerate for several hours or overnight. Place marinated chicken cubes on skewers and cook over charcoal. Do not overcook, as the chicken will continue cooking in the sauce.
For sauce: Heat the oil in a saucepan over medium-low heat. Add the onion, ginger and garlic and saute for 3 to 4 minutes. Add tomato sauce, cumin, garam masala and red chili powder and simmer for 15 minutes, stirring occasionally. Add the cooked chicken and cream and cook over medium heat for 5 minutes. Stir in fresh cilantro. Add salt to taste.
As an alternative for the chicken, use chicken tikka kebabs purchased from the restaurant. Garam masala is available at many grocery stores and at any Indian market.

I am rating this recipe from exactly what the recipe calls for in the precise amounts. It was the most bland masala I have ever tasted. Actually, it didn't even resemble a chicken tikka masala sauce. I had to eyeball and add considerably to every single ingredient, except the tomato sauce...there was way too much of that taste. I also added 1/2 tsp of tumeric. Very disappointed considering the whole excitement of Indian food is the combination of spices that should just burst in your mouth. That didn't happen. It's pretty bad when the most exciting part of the dish was the rice I put it on.

This was very easy , but not quite what I am use too . It is very bland and You should use more spices than called for . Also I used a whole onion and put at least one tsp of the spices . All and all this a good recipe though it just needed a little tweeking .

I altered the amount of spices in this recipe, it is too bland. For the marinade I used a whole teaspoon of ginger and garlic. For the sauce I used an entire small onion instead of the two tablespoons and about two tablespoons of oil. I used a teaspoon of the following ingredients, ginger, garlic, cumin, graham marsala, and chili powder. I eyeballed the cilantro until it looked like it was enough. Much better!

This recipe was overall good tasting, but not like any of the chicken tikka masala I've had in Indian restaraunts- There weren't enough spices to cover up the tomato sauce flavor, so I ended up adding double the spices and some curry paste to get the sauce to a more acceptable taste. It was yummy, but not quite what was expected. The chicken part with the marinate was delicious & perfect as specified in the recipe!! MMMmmm!!
