ingredients
6 ounces chicken breasts, skinless, pounded thin
1 ounce chanterelle mushrooms, sliced
1/2 tablespoon almonds, toasted
1 ounce proscuitto ham, julienne
2 ounces mozzarella cheese, grated
1 tablespoon chopped parsley
1/2 teaspoon herbs de Provence
4 sheets phyllo dough
directions
For Stuffing: Mix chantrelles, prosciutto, mozzarella, chopped parsley, almonds and herbs de Provence.
Place chicken breasts down flat. Put stuffing on breast and roll up. Place phyllo sheets one at a time brushing clarified butter on each sheet while stacking. Place chicken breast on one end and roll up folding in sides as you go.
