Black-Eyed Pea Restaurant's Spicy Soup

INGREDIENTS:
5 slices bacon, cut in small pieces
1 cup onion, chopped medium
2 tablespoons (or to taste) jalapenos, finely chopped
2 cups tomatoes, chopped medium
1 clove fresh garlic, minced
1 pinch salt
1 dash black pepper
3 cups water
2 beef bouillon cubes
4 cans (16 ounce size) black-eyed peas
3 cups grated Cheddar or Swiss cheese
DIRECTIONS:
In a saucepan, saute the bacon until lightly browned. Saute onions, jalapenos, tomatoes, garlic, salt and pepper in the bacon and bacon drippings.
Add the water. Dissolve the beef bouillon cubes in the mixture. Drain juice from the peas and add the peas to the soup. Add the cheese of your choice and simmer until the cheese is melted.

The flavors of the recipe were outstanding. I've never eaten at Black Eyed Pea so I don't know if this recipe is anything like what they serve (or if it's even actually on their menu). The addition of the cheese is where the recipe lost points, however. I used a good melting cheese but it was still very stringy in the broth and made it hard to eat. It just didn't seem to "go" with the rest of the recipe.
